Happy 4th everyone! I’m feeling much better today, looking forward to some ‘Thunder on th Ridge’ fireworks downtown this evening. Though I’ll probably be enjoying them from the house this year. Who’s BBQing?
Ah-h-h-h-h-h-h-h-h-h, how nice Burk, I fondu you to! :-) Have a Safe and Happy 4th! BBQing here to gatorpaw, chicken, ribs, dogs, and bergers. And grilled layered potatoes with onions, garlic, bacon bits, butter, salt-n-pepper. Then topped with melted cheese of your choice.

Needed: Potatoes (sliced with skins on)
Onions( chopped or sliced)
chopped garlic or garlic powder
bacon or ham bits ( regular bacon broken up or ham chunks can be used instead) We use whatever is on hand.
butter or margarine
cheese of your choice
salt-n-pepper
disposable tin pan
tin foil
Slice the potatoes thin with skins on, slice or chop the onions. Put a layer of potatoes in the tin pan, add some sliced onion on top of potatoes, sprinkle with some garlic powder or chopped garlic to taste, sprinkle on some bacon bits or ham bits, and put a couple dabs of margarine on the top of each layer. Salt and pepper to taste between layers. Repeat until the pan is pretty full of the layer mixture. It will shrink down some as it cooks on the grill. Cover with tin foil and put it on the grill. Usually we do this an hour before we are ready to start the meat. Check occasionally with a fork to see how the potatoes are cooking. When fully cooked and tender, remove from the grill and let sit a few minutes to cool. Then open the foil, add your favorite cheese,shredded works best, on the top of the potato mixture. Reclose the foil and allow to melt on top of the potatoes. The kids like the potatoes crispy so if you leave them on a little longer when they test done, but be sure to watch as not to burn, they will crisp up on the bottom layer of the pan.

Can be kept warm in a low oven and are good the next day if you have leftovers. You kind of eyeball how many potatoes etc to use depending on how many people you are serving. If your keeping them warm in the oven wait to add the cheese just before your ready to serve them.

Add about a quarter cup of dark brown sugar (I have used light brown also)
Add two cans of Bush Baked Beans
Bake in oven for about thirty minutes. Or you can microwave for about 10 mins. or so.
It gives just plain ol baked beans from a can a better taste.

Besides ribs an chicken an other normal BBQ fare I am doin lotsa different dips, sweet red pepper hummus, guacamole, pico de giao, salsa, five layer black bean and green onion! Various salads and BBQ’d corn on the cob. Ice cream for desert. Margaritas served poolside and ice cold beers! Bring on the fireworks and have a safe and Happy Fourth of July! :~D
We should of planned out the 4th better, and had a big Crapperville bash at your pool side David! :-) All that food, and a pool tooooooooo! Make mine a Margarita ville! Stay Safe and ENJOY!!!!!!!!!!
Thanks Mayor SusieQ, those tatters sound wonderful, I’ll let you know how they turn out when I try them. As for the beans, that guy Joe uses MY recipe, except I just cook them on top of the stove, or BBQ grill, no need to actually bake them. (That’s the way everyone cooks them down here actually) If you want to do beanie weenies, just slice up the wieners and fry them a little in some butter and add the beans and brown sugar. Yum,Yum. quick and easy.
Those tatters of yours sound really good though, and I can’t wait to give them a try. I’ve got 10 pounds of potatoes sitting on the floor of my kitchen pantry right now. Just waiting on a good recipe and now I have one.

Well it was the first time in years and years (so long ago I can’t remember) that I didn’t go to the lake downtown for the fireworks show and entertainment. I know it was a great show, it always is, and the boomBOOM’s went on for a good 30 minutes, but I didn’t even get up to go to the front door to see them. That waterbed of mine just felt too good. Sleep can be the best medicine sometimes.

gatorpaw, they are easy to make.
